We teamed up with our friends at America’s Test Kitchen to share this cast-iron take on a crowd-pleasing favorite: baked Brie. When warmed in a skillet, Brie transforms into a rich, dippable appetizer perfect for gatherings. ATK’s twist? They trim away the rind (which doesn’t melt as evenly) and cube the cheese so that every bite captures the sweet, savory mix of honey and apricots. Baking the Brie in cast iron helps it stay warm and luscious longer—just one more reason we love our skillets. Finish with a drizzle of honey and a sprinkle of chives, and serve it straight from the pan for an effortless, elegant snack. 

Ingredients

¼ cup dried apricots, chopped

¼ cup honey, divided

1 teaspoon minced fresh rosemary

¼ teaspoon salt

¼ teaspoon pepper

2 (8-ounce) wheels firm Brie, rind removed, cheese cut into 1-inch pieces 

1 tablespoon minced fresh chives

  • Instructions

    Adjust oven rack to middle position and heat oven to 400°F..

  • In a medium bowl, microwave apricots, 2 tablespoons honey, rosemary, salt, and pepper until apricots are softened and mixture is fragrant, about 1 minute, stirring halfway through. Add Brie and toss to coat.

  • Drizzle with remaining 2 tablespoons honey and sprinkle with chives. Serve warm.
